Fresh-roasted coffee has a peak flavor window. The complex oils and aromatics that make specialty coffee special? They're most vibrant in the first 7-14 days after roasting. By starting our roasts at 3 AM, we ensure that beans roasted Monday morning can be packaged, shipped, and brewing in your kitchen by Wednesday or Thursday—right in that sweet spot.
Compare that to supermarket coffee, which might sit in a warehouse for months. The difference isn't subtle.
The roast itself is a conversation
Every origin tells us something different. Ethiopian beans might want a lighter touch to preserve their floral notes. A Brazilian natural might ask for a bit more heat to bring out chocolate and nut.
